Hello Beautiful Friends! I hope you all are hanging in there!! I am so excited to say WE HAD SOME SUN!!!!! I fully took advantage of that MONDAY and took a wonderful walk after I did some chores. One of my goals I shared Monday was that I wanted to tackle cleaning my pantry in the month of February! Posting that gave me just the boost I needed and I accomplished that the same day I posted!
Yes, this sun brought a MUCH NEEDED SMILE to my face. It did however RAIN all day yesterday (Tuesday) BUT the sun blessing on Monday kept me smiling during the rain. I raised some of my windows and listened to it as I did some chores.
It is sunny today but cold! BUT your GIRL WILL BUNDLE UP AND HIT THE WOODS at some point hopefully today! I even stepped outside this morning with my warm drink in hand in the cold and let the sun hit my face for a long bit. It felt so nice.
I have been making a lot of soups this week. Normally, I never make a soup back-to-back. Monday is always soup night in the fall/winter season BUT my soul has been craving nourishing soups sooooo that is what we have been enjoying. Luckily, my family likes soups. :) After I cleaned my pantry, I tackled my refrigerator and I made some potato soup on Monday with ingredients needing to be used up. I had mashed potatoes and I turned it into potato soup and it was probably one of the best ones I have made. I also used up some ham from Christmas I had frozen to use later.
I came across this recipe on Pinterest. It was just this image with no directions, but I feel it is self-explanatory. I loved finding the little star pasta to use in it as suggested. Thank you, Amazon. :)
It was good. It was a brothy nourishing soup. Perfect soup for if you are unwell too!!!! It was basically chicken noodle soup with small star noodles and sprinkle of parmesan.
Here is the pantry before...no judgement. Lots of things leftover from the holidays and it was just time to clean it out. Plus, our young adult sons have their own things they like.
All nice and orderly! I have spaces for the guy's stuff. Our oldest is eating healthy and drinks protein shakes so he has his own little section. He has lost almost 90 pounds this past year. I am so proud of him.
After I did this, it inspired me to clean our refrigerator and freezer. I will show that tomorrow to spare this post being so lengthy. :)
After I did these chores I went to treat myself to a cup of soup and drink and then went walking as I showed above. Monday night I had a devotional book club coffee meeting with ladies in my church that I lead at Starbucks. It was so enriching and a perfect ending to my day.

Hello my Friend! I'm envious of your sunny day outside! I'm waiting for a bit of a warmer snap to go walk outside. For now it's still inside exercise. We love soup over here too!! It's the best thing in these cold months. I have a cabbage soup recipe we LOVE that I think I may make next week. It's like deconstructed cabbage rolls in a soup and it's so comforting and flavorful. I have been craving soups but sadly I have 2 that don't really enjoy them so I try not to cook them that often. I can not wait to go for a walk. It has warmed up into the 30's and it's sunny and while I'll only get to walk down to the main road to our mailbox (it's a 30 minute round trip walk) due to piles of snow everywhere it will still feel so great. Congrats to your son; that is quite an achievement!

Hey, I am currently taking any walk I can even if it's in my driveway! LOL! My mind needs it. :) Wow, you must have a long driveway! How wonderful! He has worked super hard and I agree.
The sun is such a joy! We had that on Sunday and loved it.
Doesn't it feel so good to clean out a cupboard? I'm about to head downstairs and clean out some of the storage area.
I make lots of soup too. I just got some ingredients to make vegetable beef soup as I have some soup bones in the freezer. Perfect for this cold weather!
I can't wait until it's warm enough to get out and walk. Good job on the pantry. That's on my list also. I'm having a survive, not thrive week, so no extras are getting completed. No worries, so weeks are just that way. I would have never thought you use leftover mashed potatoes to make potato soup. Genius!
Dear Chrissy, wow, I can understand you being so proud! Losing 90 pounds is quite a feat! Never easy. Kudos to him!

we eat soup all the time during the winter, it is one of my favorite things to make and eat. i love that anything goes!! i do a lot of cleaning and organizing during the winter, your pantry looks great!!!
Sometimes I make a lot of soups and sometimes not. This past weekend I made a chicken corn chowder that was delicious, but it boiled over on the stove when I was distracted for a moment and getting that cleaned off the cook top was not fun! Today at work I used that it was National Farmers Day and Homemade Soup Day to teach the special needs folks I work with about what farms mean to us and then they helped me make a big pot of vegetable beef soup that we enjoyed for lunch and shared with others at work. They really enjoyed that.

I am glad you have had a good week so far. I like the Italian soup that you shared. I will write the ingredients. I like going to the adult center for exercise and lunch this week. Shopping tomorrow for food and another store. I have been sleeping a bit better now and need to be off my phone and computer by 9 p.m. Read the first day for new bible study that starts next Tues morning. It's about the book of "Seek First the Kingdom--God's invitation to life and joy in the book of Matthew." Written by Christine Hoover. Have a good rest of your week!!
